pad thai

this is how we like to make pad thai! feel free to use this as a blueprint for your own creations!

ingredients


pad thai
  • 2 organic red peppers

  • 1 yellow onion

  • 2-4 pasture-raised organic chicken thighs

  • 2 packs of rice noodles

  • 4 organic pasture-raised eggs

  • garlic, salt, pepper to taste

  • dash of coconut oil

  • organic ghee

  • organic milk


sauce
  • 1/4 cup coconut aminos

  • 4 tbsp fish sauce

  • 2 tbsp organic rice vinegar

  • 1/8 tsp monk fruit or 4 tbsp honey/maple syrup

  • 1/4 cup organic peanut butter

  • 2 tbsp sriracha

  • 1/2 sqeeze of lime


toppings
  • organic cilantro

  • bean sprouts

  • chopped organic green onion

  • TJ’s chili crunch

  • crushed organic peanuts

  • organic peanut butter


how to make


  1. preheat oven to 400 degrees

  2. in large pot, boil 12 cups of filtered water with pinch of salt

  3. while water boils, heat skillet to medium heat

  4. chop yellow onion & peppers and add to heated & oiled (ghee) skillet and cook till desired char

  5. while veggies cook, season chicken with garlic, salt, and pepper to taste

  6. once veggies are done, move to bowl and use pan to sear chicken (1-2 min per side)

  7. once finished, add chicken to lightly oiled baking dish and bake for 12-15 min. place pan back on burner on medium/low heat

  8. add rice noodles and splash of coconut oil to boiling water for 12 minutes (stir often)

  9. combine sauce ingredients and whisk with fork. add to heated chicken/veggie pan & stir often until sauce thickens

  10. place clean pan on stove and heat to medium/high heat

  11. whisk eggs, seasonings, and a splash of milk for extra fluff

  12. add ghee to heated pan & scramble eggs, then add to bowl with veggies

  13. once sauce is thick, remove from burner and set aside

  14. once noodles are al dente, strain, rinse with cool filtered water, and add to egg and veggie bowl

  15. once chicken is done, remove from dish and chop into bite size pieces

  16. add chicken and sauce to noodle, veggie, and egg bowl and mix!

  17. plate and garnish with your choice of cilantro, fresh lime, Trader Joe’s Chili Crunch, sriracha, crushed peanuts, bean sprouts, scallions, or extra PB!
