simple salad

this is how we like to make lunch salads! feel free to use this as a blueprint for your own creations!

ingredients


salad
  • organic buttter lettuce & arugula

  • 1/2 cup of organic beats

  • 1/4 avocado

  • 1/4 red onion

  • 1 tbsp organic pomegranate seeds

  • 1 tbsp organic pumpkin seeds

  • 1 tbsp organic hemp seeds

  • 1 tbsp crushed crackers or fresh sourdough croutons

  • 2 tbsp of shredded parmesan


vinaigrette
  • 1/4 cup EVOO

  • 3 tbsp of red wine vinegar

  • 1 tbsp dijon mustard

  • 1/2 tsp oregano, pinch of salt & pepper

  • 1/2 tsp garlic powder

  • dash of monk fruit or honey/maple syrup (optional)


how to cook


  1. in large bowl, chop butter lettuce & arugula

  2. portion lettuce mix to smaller bowl for eating

  3. prepare vinaigrette by mixing ingredients into bowl and whisking with fork

  4. chop beets, red onion, & avocado

  5. top with crushed crackers, pumpkin & hemp seeds

  6. sprinkle with parmesan cheese



substitues & additions!

  • black beans, garbanzo beans, feta, goat, or vegan cheese, pickled red onion, carrots

  • protein: chicken, steak, shrimp, or tofu
